Very rich in cholesterol level for it has all the top 3 of high LDL food : Prawn, Egg Yolk and Butter. Can you resists the indulgence of this super scrumptious food? Dont just answer it yet, try making it tonight, and see if you can stand away from eating it :)

I cooked it for a very first time, using a recipe i got from a TV Program in the past Ramadhan. To prepare it is very easy, but to create the flossy structure from the egg yolk mixture, it is really hard. But it worth the energy, time and effort.

Here is the recipe

The basic ingredients(for 2-3 pax)

  1. 500g of large shrimp/ tiger prawn
  2. 4 egg yolks
  3. 125 ml of full cream milk or evaporated milk - i use full cream milk
  4. 3 garlics -chopped
  5. 2-3 sticks of sbird's eye chillies - chopped
  6. 2-3 pieces of curry leaves - washed properly
  7. 200g of unsalted butter - leave in room temperature.
  8. salt and sugar to suite your taste preference.
  9. This is a secret technique i discover myself, in order to get the string structure for the floss. And it really works!.
    • Get a plastic case( the one that pasar malam people use to put tau foo fah inside)
    • Poke 10 holes on the bottom using either fork or knife. I used fork. This holed case will be used in preparing the egg floss.

Method of cooking.

Prepare the prawn first

  • Marinade the prawn with salt for 10 minutes.
  • Melt the butter (100g) in a cooking pan under medium heat. When the butter is fully melt, add in some vegetable oils to balance the heat and to avoid the melted butter from drying
  • Deep fry the marinated prawn, please make sure that the prawn is not over cook.
  • Move the prawn aside, and use the butter leftovers in the pan for the next procedures.

Next, prepare the egg floss :

  • Beat the egg yolks until fluffy
  • Melt the 50g butter in the previously used pan under medium heat.
  • Pour the beaten egg into the holed case, and let the beaten yolk drip from the hole while you make a circular motion, using one hand.
  • Use your other hand to stir the egg inside the pan vigorously(as if you were making scramble egg), to create the flossy structure.
  • Continue stirring under high heat until the egg turns to golden color.
  • Remove from heat, and sieve the egg floss. Let all the excessive oil drip.
  • Leave aside while you are preparing the butter prawn

Prepare the buttered prawn.

  • Under medium heat, melt the balance of 50g butter.
  • After the butter is completely melted, add in the chopped garlic. Fry them untill fragrant
  • Now add in the chopped Bird's Eye Chillies.
  • Next, add in the milk, and stir until well-mixed.
  • Add in the curry leaves.
  • Add in the sugar and salt
  • Finally, add in the pre-fried prawn into the batter.
  • Cook the mixture until dry.
  • Remove the Buttered Prawn from the heat.
  • Put it on a serving plate, add the egg floss and garnish it as you wish.

Voila! The King-of-Cholesterol is now ready to serve. Bon appetite :)
